2/3 pound Lion’s Mane mushroom
½ cup flour
½ teaspoon salt
¼ teaspoon pepper
1 teaspoon oregano
1 teaspoon onion powder
½ teaspoon garlic powder
3 eggs
1 cup panko or crushed crackers
Coconut oil

Directions
Pull the Lion’s Mane apart into bite sized pieces. Pat them down so they are flat.
In a small bowl combine the flour and spices. In a separate bowl whisk the eggs. Put the panko into its own bowl.
Roll each squashed lion’s mane bite in the flour mixture, then the eggs, and then the panko.
In a sauce pan, melt enough coconut oil so it is about half an inch deep over medium/high heat. Once the oil is hot, add a few of the nuggets in a single layer without touching each other. Fry the nuggets on each side for 45 seconds to a minute or until they are golden brown all over. Remove them from the oil and set on a paper towel or lint free towel covered plate. Repeat in batches until all your nuggets are cooked.
