Lion's Mane Nuggets

Chicken-less chicken nuggets anyone? Lion’s Mane's unique pull apart texture perfectly mimics chicken in this easy recipe that can be used with any amount of Lion’s Mane. Add any spices you prefer to the flour mixture to add extra flavor to your nuggets.

Ingredients

  • 2/3 pounds Lion's Mane Mushroom
  • ½ cup flour
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 teaspoon oregano
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • 3 eggs
  • 1 cup panko or crushed crackers
  • Coconut oil
  • Truff Hot Sauce

Directions

  1. Pull the Lion’s Mane apart into bite sized pieces. Pat them down so they are flat.

  2. In a small bowl combine the flour and spices. In a separate bowl whisk the eggs. Put the panko into its own bowl.

  3. Roll each squashed lion’s mane bite in the flour mixture, then the eggs, and then the panko.

  4. In a sauce pan, melt enough coconut oil so it is about half an inch deep over medium/high heat. Once the oil is hot, add a few of the nuggets in a single layer without touching each other. Fry the nuggets on each side for 45 seconds to a minute or until they are golden brown all over. Remove them from the oil and set on a paper towel or lint free towel covered plate. Repeat in batches until all your nuggets are cooked.

  5. Enjoy the nuggets with your favorite dipping sauce! We recommend Truff Hot Sauce.
