It has a delicate, savory flavor and a velvety, tear-apart texture — sear it hot and the edges turn golden and crisp. Here is where to start.

Trumpet and Oyster White Chili
Sear your harvest until the edges brown, then simmer it into a creamy white chili — hominy, white beans, salsa verde, and a smoky kick from fire-roasted peppers.

The Mini-Farm is one of our most-gifted kits — a birthday surprise, a holiday host gift, a science experiment a kid will actually remember. It arrives ready to grow, with everything needed to harvest in the first week. Gifting it soon? Set it up within seven to ten days of arrival for the best first flush.
Grown on a bluff above the Pajaro River
Located in northern Monterey County in the coastal town of Moss Landing, our eight-acre farm sits above the Pajaro River, overlooking the Pacific. The steady ocean breeze and coastal fog make it an ideal place to cultivate mushrooms.
The same mushrooms our chefs buy fresh is the strain colonizing your Mini-Farm — grown on sterilized sawdust substrate, the way the Garrone family has done it for more than forty years.
Tree Oyster Mini-Farm Grow Kit FAQ
How much will I actually harvest?
Expect one to two pounds of oyster mushrooms across three to four flushes, over roughly two months, with light daily misting. Each kit is handcrafted, so results vary — but your first crop is guaranteed.
How fast will I see mushrooms, and how big do they get?
Tree oysters are one of the fastest, most dramatic mushrooms to grow. Most growers see the first tiny pins within about a week, and the clusters size up quickly from there — often ready to harvest just a few days later. They fruit in shelved, fan-shaped clusters that can reach up to 18 inches across.
Do I need any equipment or experience?
None. Your kit arrives fully colonized and ready to fruit. You need only a spray bottle of water and a spot with indirect light. Printed instructions, setup videos, and our FAQ walk you through every step.
What if my kit doesn't fruit?
We guarantee your first crop. If you follow the instructions and your Mini-Farm does not fruit, email us photos of your block and we will help you troubleshoot — and if it still does not grow, we replace it.
Do oyster mushrooms taste like oysters, or contain shellfish?
No shellfish at all. Tree oysters are a mushroom, named for their fan-like shape and delicate, seafood-adjacent flavor — not for any relation to shellfish. They are naturally vegan and safe for a shellfish allergy. Expect a mild, savory taste and a velvety, tear-apart texture that crisps beautifully when seared hot.
I want to give this as a gift. Anything to know?
Mini-Farms are living kits, so they are best set up within seven to ten days of arrival. If you are gifting it, plan the timing so your recipient can start growing soon after they open it.
