This exotic tropical strain of oyster mushrooms produces bright pink fruiting bodies that look more like coral or rose petals than mushrooms. A high iron content gives this mushroom its vivid color and subsequent meaty taste. The flavor is so meaty, in fact, that it can be used as a substitute -- the perfect choice for vegetarians.
