Pink Tree Oysters

 

Pink tree oysters are part of the Pleurotus family, which also includes Yellow Oysters, Blue Oysters, and King Trumpets. Easily recognizable for its vibrant color and rose petal appearance, its flavor is uniquely steak-like, and will take a sear very nicely. They make a very good meat substitute for this reason – but be sure to use them while they are still very fresh. Like real meat, their perishability is high. They make excellent mushroom tacos, and are good in a cream sauce, which helps tame their strong flavors somewhat.
