Spicy Asian-style Green Beans with Shiitakes

Ingredients
1 ½ pounds green beans
neutral oil as needed

1 pound shiitake mushrooms
1 ½ tablespoon garlic (chopped)
1 ½ tablespoon ginger (grated)
1 tablespoon sambal
1 /4 cup tamari or soy sauce
½ teaspoon lemon juice
kosher salt (to taste)
Lemon wedges for garnish
Directions
Clean green beans and bring a pot of salted water to a boil. Once the water is boiling, add the green beans to blanch for a minute or so. You don't want them too soft, since you will be finishing them in the pan with the rest of the ingredients.
Fill a large sauté pan with just enough neutral oil to cover the bottom, and heat it on a burner over medium high heat.
When oil is hot, add the shiitake mushrooms, and cook until they begin to release their juices. This will take about 5 minutes.
Toss the green beans into the pan with the mushrooms and sauté for 1 to 2 minutes. Add the garlic and ginger and sauté for another minute or two. Add the sambal, tamari, and lemon juice. Cook for a finally couple of minutes or until everything is coated with sauce.
Turn off the heat, salt to taste, and serve. Garnish with lemon wedges. Enjoy!
