Ingredients

  • 1 1/2lbs green beans
  • neutral oil as needed
  • 1lb shiitake mushrooms
  • 1 1/2 tablespoon garlic (chopped)
  • 1 1/2 tablespoon ginger (grated)
  • 1 tablespoon sambal
  • 1/4 cup tamari or soy sauce
  • 1/2 teaspoon lemon juice
  • kosher salt (to taste)
  • lemon wedges for garnish

Directions

  1. Clean green beans and bring a pot of salted water to a boil. Once the water is boiling, add the green beans to blanch for a minute or so. You don't want them too soft, since you will be finishing them in the pan with the rest of the ingredients.

  2. Fill a large sauté pan with just enough neutral oil to cover the bottom, and heat it on a burner over medium high heat.

  3. When oil is hot, add the shiitake mushrooms, and cook until they begin to release their juices. This will take about 5 minutes.

  4. Toss the green beans into the pan with the mushrooms and sauté for 1 to 2 minutes. Add the garlic and ginger and sauté for another minute or two. Add the sambal, tamari, and lemon juice. Cook for a finally couple of minutes or until everything is coated with sauce.

  5. Turn off the heat, salt to taste, and serve. Garnish with lemon wedges. Enjoy!
