
Spicy Asian-style Green Beans with Shiitakes

These Spicy Asian-style Green Beans burst with bold flavor, featuring crisp-tender green beans and sautéed fresh shiitake mushrooms, tossed with fragrant ginger, garlic, and a fiery hit of sambal for a vibrant, umami-rich dish with just the right amount of heat.

Ingredients
- 1 1/2lbs green beans
- neutral oil as needed
- 1lb shiitake mushrooms
- 1 1/2 tablespoon garlic (chopped)
- 1 1/2 tablespoon ginger (grated)
- 1 tablespoon sambal
- 1/4 cup tamari or soy sauce
- 1/2 teaspoon lemon juice
- kosher salt (to taste)
- lemon wedges for garnish
Directions
- Clean green beans and bring a pot of salted water to a boil. Once the water is boiling, add the green beans to blanch for a minute or so. You don't want them too soft, since you will be finishing them in the pan with the rest of the ingredients.
- Fill a large sauté pan with just enough neutral oil to cover the bottom, and heat it on a burner over medium high heat.
- When oil is hot, add the shiitake mushrooms, and cook until they begin to release their juices. This will take about 5 minutes.
- Toss the green beans into the pan with the mushrooms and sauté for 1 to 2 minutes. Add the garlic and ginger and sauté for another minute or two. Add the sambal, tamari, and lemon juice. Cook for a finally couple of minutes or until everything is coated with sauce.
- Turn off the heat, salt to taste, and serve. Garnish with lemon wedges. Enjoy!
