Vegan Mushroom Curry
By Chef Warren Siu
This is the curry that fed about 120 guests at our October farm tour on Monterey Bay, and the recipe we were asked for most. Chef Warren Siu builds it on a mix of mushrooms, so every bite has a different texture: meaty king trumpet, silky oyster, savory shiitake, and chanterelles when they are in season. A coconut milk infused with galangal and makrut lime leaves keeps it bright and fragrant.
Adjust the heat and seasoning to your taste and make it your own.

Ingredients
For the curry:
- Mixed mushrooms: shiitake, oyster, chanterelle, and king trumpet, cut into bite-size pieces
- Diced onion, diced celery, diced carrot, garlic, and fresh ginger
- Neutral cooking oil
- Mae Ploy Vegan curry paste
- Coconut milk infused with galangal root and kafir lime leaves
- Tamari or soy sauce
- Lime juice
For serving
- Cooked rice
- Chopped cilantro
- Sliced scallions
- Fried onions
Optional additions
- 2 cups spinach
- 1 bell pepper, sliced
- 1 can (15 oz) chickpeas, drained
- Other seasonal vegetables
Quick how-to
- Sauté mushrooms in oil until browned, working in batches as needed. Set aside.
- Cook onions, carrots and celery until softened. Add garlic, ginger and curry paste; stir briefly until fragrant.
- Add infused coconut milk and enough mushroom stock to reach your preferred consistency. Add any firmer vegetables and simmer until tender.
- Return mushrooms to the sauce. At this point, you can add chickpeas or greens, if using, and simmer briefly to bring everything together.
- Finish with Tamari and Lime Juice. Adjust salt, heat, and richness to taste. Serve over rice with cilantro, scallions, and fried onions
Chef's Tip
Brown the mushrooms well and in batches. A crowded pan steams them instead of searing, and that deep golden color is where most of the flavor comes from.
