Fiddleheads are the juvenile form of a fern frond, a tightly curled fist of leaves that will unfurl as the plant matures. They are available only in early springtime, and have an earthy, vegetal flavor. Fiddleheads contain high levels of omega-3 and omega-6 fatty acids, and are high in iron and fiber. They are best prepared like asparagus, pan seared or roasted. We like to serve them with a squeeze of lemon or a light vinaigrette.
