Braised Porcini

Ingredients

  • 1 lb. fresh, firm Porcini 2 shallots, minced
  • 1 onion, minced
  • 4 Tbsp olive oil
  • 2 Tbsp butter
  • Salt & Pepper to taste
  • 1 Tbsp All-purpose flour
  • 2/3 cup dry white wine
  • 2 cups chicken stock
  • 2 Tbsp minced parsley

Directions

  1. Clean porcini well, then chop.

    Sauté the shallot and onion in the olive oil and butter until softened. Add the mushrooms and sauté for 7 to 8 minutes longer. Stir in some salt & pepper, then the flour and continue for 5 minutes. Add the wine and stock, and cook for 10 minutes longer.

    Sprinkle with the parsley and serve immediately.
